The Green Avocado Cake with Strawberries is a delicious and colorful twist on traditional loaf cakes, combining the creamy richness of avocado with the sweetness of fresh strawberries.
Ingredients:
For the cake:
- 1 ripe avocado (mashed)
- 1/2 cup (120 ml) vegetable oil
- 3/4 cup (150 g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups (190 g) all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup (120 ml) milk
- Optional: A few drops of green food coloring for a more vibrant color
For the glaze:
- 1 cup (120 g) powdered sugar
- 2–3 tbsp milk or lemon juice (adjust for desired consistency)
- 1/2 tsp vanilla extract (optional)
Topping:
- Fresh strawberries, sliced
Instructions:
- Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
- In a large bowl, whisk together the mashed avocado, oil, and sugar until smooth.
- Add the eggs and vanilla extract and mix until fully combined.
- In another bowl, combine flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Stir until just combined.
- If desired, add a few drops of green food coloring to enhance the color.
- Pour the batter into the prepared loaf pan and bake for 40–50 minutes, or until a toothpick inserted comes out clean.
- Allow the cake to cool completely before glazing.
For the glaze
- Mix powdered sugar with milk (or lemon juice) and vanilla until smooth and pourable.
- Drizzle over the cooled cake.
