Green Avocado Cake with Strawberries

The Green Avocado Cake with Strawberries is a delicious and colorful twist on traditional loaf cakes, combining the creamy richness of avocado with the sweetness of fresh strawberries.

Ingredients:

For the cake:

  • 1 ripe avocado (mashed)
  • 1/2 cup (120 ml) vegetable oil
  • 3/4 cup (150 g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups (190 g) all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (120 ml) milk
  • Optional: A few drops of green food coloring for a more vibrant color

For the glaze:

  • 1 cup (120 g) powdered sugar
  • 2–3 tbsp milk or lemon juice (adjust for desired consistency)
  • 1/2 tsp vanilla extract (optional)

Topping:

  • Fresh strawberries, sliced

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, whisk together the mashed avocado, oil, and sugar until smooth.
  3. Add the eggs and vanilla extract and mix until fully combined.
  4. In another bowl, combine flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Stir until just combined.
  6. If desired, add a few drops of green food coloring to enhance the color.
  7. Pour the batter into the prepared loaf pan and bake for 40–50 minutes, or until a toothpick inserted comes out clean.
  8. Allow the cake to cool completely before glazing.

For the glaze

  1. Mix powdered sugar with milk (or lemon juice) and vanilla until smooth and pourable.
  2. Drizzle over the cooled cake.

To serve:
